Pav Bhaji
Ingredients:
2 medium-sized potatoes, boiled and mashed
1 cup of mixed vegetables (cauliflower, peas, capsicum), boiled and mashed
2 medium-sized onions, chopped
5 medium-sized tomatoes, chopped
1 tablespoon of ginger-garlic paste
1 tablespoon of pav bhaji masala
1/2 teaspoon of turmeric powder
1 teaspoon of red chili powder
Salt to taste
Butter, oil
8 pav (buns)
Lemon wedges and chopped onions for garnish
Instructions:
Heat a pan and add 2 tablespoons of butter to it. Once
the butter has melted, add oil, add chopped onions and sauté until translucent.
Add ginger-garlic paste and sauté for a minute or until
the raw smell goes away.
Add chopped tomatoes and cook until they become soft and
mushy.
Add turmeric powder, pav bhaji masala, red chili powder and salt to taste.
Mix well and cook for 2-3 minutes.
Add mashed potatoes and mixed vegetables to the pan. Mix
well until everything is combined.
Add some water to the pan to get the desired consistency
of the bhaji. Mix well and let it cook for 5-7 minutes.
In the meantime, heat a tawa and apply some butter on it.
Cut the pav in half and place it on the tawa. Let it cook
until it becomes slightly crispy.
Once the pav is ready, take it off the tawa and serve it
hot with the bhaji, a dollop of butter, and garnish it with lemon wedges and
chopped onions.
Your delicious Pav Bhaji is now ready to be served.
