wheat flour
1 tsp salt
1 tsp
vegetable oil
Warm water
as required
For Filling:
3
medium-sized potatoes, boiled and mashed
1 tsp grated
ginger
1 green
chili, finely chopped
1 tsp red
chili powder
1 tsp cumin
powder
1 tsp
coriander powder
1 tsp amchur
powder (dry mango powder)
Salt, to
taste
1 tbsp
finely chopped fresh coriander leaves
1 tbsp
vegetable oil
For Cooking:
Butter or
ghee for cooking
Dry flour
for dusting
Instructions:
In a mixing
bowl, combine the whole wheat flour, salt, and oil. Slowly add in warm water
and knead to form a soft and smooth dough. Cover and set aside for 10-15
minutes.
In a
separate bowl, mix together the mashed potatoes, ginger, green chili, red chili
powder, cumin powder, coriander powder, amchur powder, salt, coriander leaves,
and vegetable oil until well combined.
Divide the
dough into equal-sized balls and roll them out into small circles, around 3-4
inches in diameter, using a rolling pin and some dry flour for dusting.
Place a
spoonful of the potato filling in the center of each circle, and bring the
edges of the circle together to enclose the filling, making sure there are no
gaps.
Roll the
filled dough balls out gently, using a rolling pin and some dry flour, into
larger circles, around 6-7 inches in diameter.
Heat a
skillet or tawa over medium-high heat, and cook the parathas on both sides,
adding butter or ghee as needed until golden brown and crispy.
Repeat with
the remaining dough and filling until all the parathas are cooked.
Serve hot with yogurt or chutney. Enjoy your delicious Aloo Paratha!
