Chole Bhature Recipe




 

Chole bhature is a popular North Indian dish that consists of spicy chickpea curry (chole) and deep-fried bread (bhature). Here's a recipe for making it at home:

 

Ingredients for chole:

1 cup dried chickpeas (chana), soaked overnight

1 large onion, finely chopped

2 medium-sized tomatoes, pureed

2 green chillies, finely chopped

1 tablespoon ginger-garlic paste

1 teaspoon cumin seeds

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

1/2 teaspoon red chilli powder

1/2 teaspoon garam masala powder 

2 tablespoons oil

Salt to taste

Water as required


 

Ingredients for bhature:

2 cups all-purpose flour (maida)

1/2 cup yogurt (dahi)

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon sugar

1/2 teaspoon salt

2 tablespoons oil

Water as required

Oil for deep-frying


Instructions:

Drain the soaked chickpeas and pressure cook them with 4 cups of water and a pinch of salt until they are soft and tender. It usually takes around 10-12 whistles on medium flame.


In a pan, heat 2 tablespoons of oil and add cumin seeds. When they start to sizzle, add finely chopped onions and sauté until they turn golden brown.


Add ginger-garlic paste, chopped green chillies and sauté for another minute.


 Add pureed tomatoes, turmeric powder, coriander powder, red chilli powder, garam masala powder and salt. Cook until the oil separates from the mixture.

 

Add the cooked chickpeas to the mixture and mix well. Add water as required to adjust the consistency of the gravy. Simmer the curry for 10-15 minutes until the chickpeas absorb the spices and the curry thickens.

 

For the bhature, mix all-purpose flour, yogurt, baking powder, baking soda, sugar, salt and 2 tablespoons of oil in a bowl. Mix well to form a soft dough. Add water gradually to knead the dough.

 

Cover the dough with a damp cloth and let it rest for 30 minutes.

 

Divide the dough into equal portions and roll them into circles or oval shapes using a rolling pin.


Heat oil in a deep frying pan. When the oil is hot, add the rolled bhature to the pan one by one and fry until they puff up and turn golden brown. Flip the bhature to fry both sides evenly.


Serve the hot and crispy bhature with the spicy chickpea curry (chole). Garnish withchopped onions, lemon wedges and fresh coriander leaves.
